Simple Honey-Glazed Salmon

Ingredients

  • 1 sockeye or chum salmon fillet (8 oz), cut into 2 pieces
  • 1 teaspoon honey
  • 1 teaspoon ketchup

    Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray. Place salmon on foil.

    In small bowl, stir together honey and ketchup. Spread mixture over salmon.

    Bake 12 to 18 minutes or until thickest part of fish flakes easily with fork.

  • The honey-ketchup combination creates a sweet and zesty complement to the mild salmon flavor.
  • Double the recipe and use the leftover salmon to create a cold salad. Cube the salmon and toss it with cooked rotini pasta, blanched vegetables and your favorite dressing. Chill the salad, then serve it on lettuce leaves.
