I used the white cake part as a sheet cake with Chocolate frosting. 350 @ 35 minutes in a air pan produced a clean tooth pick and a dry medium heavy cake. Next time I will whip the whites and fold it. This recipe could be a delete?

My go-to recipe for the perfect lemon-filled coconut cake. Easy to make and comes out great every time - light and elegant. I make this at least once a year as a birthday cake. I have also made the Lady Baltimore option - also delicious. I have multiplied the ingredients by 1.5 for turning this into a 3-layer cake: 3.25 c cake flour; 2.25 c sugar; 4.5 tsp baking powder; 1.5 tsp salt; 0.75 c shortening; 1.5 c milk; 1.5 tsp vanilla; 6 egg whites. Mix as directed, pour into three 9" cake pans. I recommend using cake flour over regular flour. Other than making it bigger as I have, there's no way you can improve this classic recipe.
