Shrimp Salad Italiano (lighter recipe)

Ingredients

  • 1 package (14 ounces) frozen precooked salad tortellini
  • 3/4 pound cooked peeled deveined medium shrimp, thawed if frozen
  • 1/4 cup sliced ripe olives
  • 1/4 cup chopped red onion
  • 1/3 cup fat-free Italian dressing

Steps

  • 1
    Thaw tortellini as directed on package.
  • 2
    Toss tortellini and remaining ingredients until coated with dressing. Refrigerate before serving if desired.

  • Play around with the flavors of this salad by replacing Italian dressing with another variety of fat-free dressing.
  • Thaw frozen shrimp in a flash by placing in a colander and rinsing with cool water until ice crystals have melted and shrimp is thawed.
