Shrimp, Pasta and Pepper Bake

Ingredients

  • 1 package (16 oz) uncooked mostaccioli pasta
  • 1/2 cup red bell pepper strips
  • 1/2 cup green bell pepper strips
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 package (12 oz) frozen shelled deveined cooked small shrimp, thawed
  • 1 can (8 oz) Muir Glen™ organic tomato sauce
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup grated Parmesan cheese

Steps

    Heat oven to 350°F. Cook pasta as directed on package; drain.

    In ungreased 3-quart casserole or 13x9-inch (3-quart) glass baking dish, place pasta. Stir in peppers, tomatoes, shrimp, tomato sauce, mushrooms, oregano and red pepper flakes; sprinkle with cheese. Cover with foil.

    Bake 15 to 20 minutes or until thoroughly heated.
