Shrimp and Artichoke Quiche

Ingredients

lb frozen cooked shrimp, thawed, coarsely chopped (1 1/2 cups)

medium green onions, sliced (3 tablespoons)
1
cup shredded Swiss cheese (4 oz)
1
cup shredded Parmesan cheese (4 oz)
1
cup Original Bisquick® mix
2
eggs
1
cup milk
1 1/2
teaspoons Cajun seasoning
1
can (14 oz) Progresso® artichoke hearts, drained, cut lengthwise in half

Directions

  • 1 Heat oven to 400°F. Lightly spray 9-inch glass pie plate with cooking spray. Sprinkle shrimp and onions in pie plate.
  • 2 In small bowl, mix cheeses; sprinkle 1 cup of the cheese mixture over shrimp and onions. In medium bowl, stir Bisquick mix, eggs, milk and Cajun seasoning with fork or whisk until blended. Pour evenly over cheeses. Top with artichoke heart halves, cut sides down, and remaining 1 cup cheese mixture.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Good basic recipe that you can "make your own" depending on what you have available in your kitchen. I made this last night and it was wonderful. Made it with half shrimp and half canned lump crab meat, didn't have Swiss, so used pepper jack cheese with the parm. I needed to use up some cream, so used that and didn't have artichoke hearts, but used artichoke bottoms, sliced. I even made up a half recipe for Cajun spice mix, since I didn't have it on hand, but had the ingredients. I did use the red pepper flakes and all in all, it was a delicious meal. I will definitely be making this again. Husband LOVED it!

I was in a hurry to make dinner tonight, so I decided to make the shrimp and artichoke quiche. It was easy to put together and delicious. I served with orange slices and it made a wonderful and fast meal. I will definitely make again.
