Shredded Thai Chicken Salad

Ingredients

Salad

cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)

cup julienne (matchstick-cut) carrots
1
cup broccoli slaw mix
1
large green onion, chopped

Dressing

tablespoons creamy peanut butter
2
tablespoons rice vinegar
1
tablespoon vegetable oil
1
tablespoon honey
4
teaspoons soy sauce
1/8
teaspoon red pepper sauce
Fresh cilantro, if desired

  • 1 In large bowl, toss salad ingredients.
  • 2 In small bowl, beat dressing ingredients with wire whisk. Just before serving, drizzle dressing over salad; toss until evenly coated. Garnish with cilantro.

Serve this flavorful salad in lettuce cups. Boston lettuce, Bibb lettuce or radicchio would all work well.

LOVED! I always used to have to go out to eat to get my thai food cravings satisfied but this recipe went above and beyond! So fresh and delicious I used shredded chicken breasts that I pan seared then baked and it still turned out wonderfully and family couldn't stop raving about it!

OMG!!!! This is delicious!!! I added some cooked chow mein noodles for extra substance, and used Tabassco sauce instead of the red pepper sauce, as I didn't have any. Used about 8 drops. and it is really good...A keeper!!!

Loved the salad. Could have been a little spicier though. I will experiment with some of the suggestions in the comments. I added peanuts to the salad.
