Sesame Green Beans

Ingredients

  • 1 lb fresh green beans
  • 2 teaspoons sesame seed
  • 1 tablespoon rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes

    In 2-quart saucepan, heat 1 inch water to boiling. Add beans. Boil uncovered 5 minutes. Cover and boil 3 to 5 minutes longer or until crisp-tender.

    Meanwhile, in ungreased 8-inch skillet, heat sesame seed over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown. Stir in remaining ingredients; heat through.

    Drain beans. Pour sauce over beans; toss until evenly coated.

  • A 1-pound bag of frozen green beans can be substituted for the fresh green beans. Cook as directed on the package, then continue with the recipe.
  • Be sure to remove the sesame seed from the heat just as it turns golden brown. It will continue to brown even after you take it off the burner.
