Seasoned Deep-Fried Black-Eyed Peas

Ingredients

  • 2 cups vegetable or canola oil
  • 1 cup frozen black-eyed peas, thawed
  • 1 tablespoon seafood seasoning (from 6-oz container)

Steps

    In deep 2-quart saucepan, heat oil to 325°F. Line plate with layers of paper towels to absorb oil after cooking peas.

    Carefully place peas in hot oil; cook 3 to 4 minutes.

    Using wire strainer or skimmer, transfer peas to plate. Immediately sprinkle with seasoning.

  • You can use a deep-fat fryer instead of a saucepan.
  • Use a candy thermometer to be sure your oil is at the correct temperature.
  • To determine if peas are cooked properly, taste one. It should be crunchy on the outside and creamy on the inside.
