Ingredients

lb russet potatoes
1
large yellow onion
4
oz gruyere cheese
4
oz mild swiss cheese
2
cup heavy cream
1
tsp thyme, dried
1
TSP granulated garlic
8
slices bacon
1
tsp pepper
1
tsp salt

  • 1 Peel potatoes and onion, using a mandolin, slice peeled potatoes and onion very thin.
  • 2 Grate cheeses mix together In sauce pan melt 3/4 of the grated cheeses in heavy cream adding the thyme and garlic.
  • 3 Fry bacon in skillet until crisp, but not over cooked crumble in pieces.
  • 4 In a baking dish, layer potatoes, onions, small amount of bacon, seasoning each layer with salt and pepper. Pour the cream and cheese over the layers. Continue layering until all potatoes, bacon, and most of onion are used Finish the top with the last amount of grated cheese.
  • 5 Place covered dish in a 350 oven for 1 hour and 15 minutes until most of the liquid has been absorbed. Uncover and continue cooking until the top is browned to your satisfaction!
