Lots of prep work, wish this was a do-ahead. BUT, totally worth the time and effort. This dish was amazing! I used fresh spinach (steamed down). Dissappeared quickly with lots of compliments and recipe requests. Will definitely do again and again.

I have made this dish twice for a carry in for work and everyone loved it both times. I got numerous requests for the recipe which I gladly passed along. It's easy and quick to make.

JUST today made this for brunch! Didn't have spinich so we ommited it, didn't have flour so we substituted that for Bisquick. This was a wonderful meal! Very filling and delish :o)

This dish is incredibly flavorful. It is a nice twist to the more traditional breakfast casseroles. May consider cutting down to one box of spinach and stir the egg mixture in a little so it doesn't just settle at the top. Easy to make, filling, and enough flavor for all to enjoy.

I made this to take to a church breakfast social. It was a big hit and every crumb was eaten! People were asking for the recipe. I'm not fond of mushrooms but I even had a second serving while some came back for a third serving. I will definitely be making this one again and again.

We made this for breakfast for guests. I forgot about the self rising flour and used regular flour. It was still delicious and our guests raved. We also used bulk breakfast sausage instead of Italian sausage.

Yammi!... I cooked for dinner and my husband and kids loved!! Easy and fast!! I didn't have self-rising flour so I used All-purpose flour, whole-grain flour and a little bit of baking powder and salt. Worked great!!
