Baked this cheesecake for a Christmas dinner dessert. Overwhelming response from my family...OMG!! The stout enhances the chocolate nicely. The salted caramel is not only delicious on the cheesecake but would be equally delicious on its own (on ice cream). I do strongly suggest baking the cake over a pan of water . Bake until the edges are set and the center is jiggly. When done, turn off oven & cool for 30 minutes in the oven. Remove from oven, run knife along edge of pan to release, cool completely then refrigerate overnight.
