RE ngonzal4: Be sure that when your measuring Bisquick that you use metal measuring cups for dry measuring and that you spoon the mix into the measuring cup. Also ground chicken is much drier than chicken breasts which add more juice which soaks into the crust. Love the idea of the corn. :) Hope this helps.

Very good recipe, and very easy to alter. I didn't have chicken breast so I used ground chicken. I cooked the chicken with some chili powder for more flavor. I used two different salsas for some extra flavor, and added an 8 oz. can of corn. The crust is a little dry - anyone have suggestions on how to change this? All in all, a good, easy, quick, and cheap dinner. Like others have said, very easy to adjust to your liking.

easy to make, use good quality salsa, as it's all that flavors the dish. used store brand it was so-so. I'd make again, but use better salsa + add fresh veggies

I've been making something similiar to this for a long time but I've always coated the chicken in tace seasoning instead of the dough.

OK...This recipe just came up on my Facebook page and I thought mmmmmm I have one leftover grilled chicken breast, one leftover corn on the cob, and some pico (chopped tomato, onion, cilantro, jalapenos). SO, I doubled the dough, used a 8X8 pan and layered the grated cheese, cubed chicken, corn cut off the cob and topped it with the pico. This was awesome. Next time I will add some black beans.

To add to my below comment: I doubled the dough & put it in a 8X8 and I think it was a little to much so next time I will only use 1 1/2 the dough amount and not double it. As I read the below comments I will add some spices or maybe grated cheese to the dough because it was a little bla. This would also be good with a corn bread bottom and of course add extra cheese. Otherwise this was great and it used up some leftover chicken, corn & pico that I already had.

Awesome recipe. I have taped this one to the inside of my kitchen cabinet. I usually cook a couple chickens a week and use the meat in different recipes during the week. This one is supper easy and kid friendly. Quick for Baseball and Karate nights. Started with the cooking for two recipe but had to come back for the big crowd recipe. Kids love it as left overs in their lunch boxes. Works well with ground chicken or turkey as well. Kudos to this one.

It was easy to make and easy ingredients. I thought it was adequate--the crust was a little too dry for me. I would make again, but not on the frequent rotation.
