You can have this six-ingredient meal in the oven in 15 minutes! It's a Southwestern twist on an old standby.

If you are looking for a spicey dish, this isn't for you. But if you are looking for an easy (although do prepare for 2 hours in the oven!)meal to throw together on a weeknight, then try this one out. I didn't use as many black beans as they called for and as a side, I had a tray of tostitos and melted cheese/sour cream. It was good to dip the chips in your extra rice! I also added some salt and peper to the chicken to taste and used wheat brown rice instead of white.

Chicken was tasty, but that was about it. Not impressed.

Made this the other night. It was horrible. Out of 6 of us in the house. Not one person would eat this. Bland and just plain gross. Our dogs ate good that night.

We had a couple over for dinner last night. I used boneless and skinless chicken breast (meaty ones at that). I used a package Enchilada sauce mix which left me 2 oz. short from the 10 oz. required. I used Uncle Ben's rice. We had a salad with it. Next time I will have corn on the side. I did not have a choice with the less sodium in the soup and bean areas (too bad). Would make this again.

This is a great recipe. My husband and I both loved it. I've read other reviews mentioning placing corn into the recipe and believe I may try it the next time that I make again.

This also works as a freezer meal. We use boneless skinless chicken tenders and add frozen corn for a complete meal.

I used boneless chicken breasts (cut up) and also added a can of whole kernel corn. Cooked about 45 minutes covered at 350 and then uncovered at 375 for about 25-30 minutes. Sprinkle cheese. Kids loved it! Made it again recently without the chicken. Leftovers were great.

Honest to god i do not see how chicken will take 2 hours. I am going to try making this with regular chicken flavored rice and use chicken tenders and cook it for 1 hour uncovered. i am confident it will work out. i will also use a slightly spicy sauce

This is good tasting and easy to make. I used skinless chicken breast, fat free cream of celery soup and low sodium black beans and it was still very flavorful. It cut down on a lot of unnecessary calories. It certainly did not need to bake for 2 hours, however. I will definitely make this again even without the chicken.
