Made this the other night. It was horrible. Out of 6 of us in the house. Not one person would eat this. Bland and just plain gross. Our dogs ate good that night.

We had a couple over for dinner last night. I used boneless and skinless chicken breast (meaty ones at that). I used a package Enchilada sauce mix which left me 2 oz. short from the 10 oz. required. I used Uncle Ben's rice. We had a salad with it. Next time I will have corn on the side. I did not have a choice with the less sodium in the soup and bean areas (too bad). Would make this again.

This is a great recipe. My husband and I both loved it. I've read other reviews mentioning placing corn into the recipe and believe I may try it the next time that I make again.

This also works as a freezer meal. We use boneless skinless chicken tenders and add frozen corn for a complete meal.

I used boneless chicken breasts (cut up) and also added a can of whole kernel corn. Cooked about 45 minutes covered at 350 and then uncovered at 375 for about 25-30 minutes. Sprinkle cheese. Kids loved it! Made it again recently without the chicken. Leftovers were great.

Honest to god i do not see how chicken will take 2 hours. I am going to try making this with regular chicken flavored rice and use chicken tenders and cook it for 1 hour uncovered. i am confident it will work out. i will also use a slightly spicy sauce

It cut down on a lot of unnecessary calories. It certainly did not need to bake for 2 hours, however. I will definitely make this again even without the chicken.
