eggs (beaten)

tablespoon lemon juice

cup minced onion

cup cracker crumbs

teaspoons Dijon mustard

cup milk
salt and pepper to taste
  1. Preheat oven to 350 degrees.
  2. Mince onion. Melt one tablespoon butter to mix in the loaf. Save the other tablespoon to grease the loaf pan.
  3. Mix the salmon, eggs, 1 tablespoon melted butter, onions, cracker crumbs, Dijon mustard, and milk. Add lemon juice. Mix in salt and pepper to taste.
  4. Grease a 9x5 inch loaf pan with the remaining tablespoon of butter. Pour salmon mixture in and press into pan.
  5. Bake at 350 degrees for 45 minutes or until done.
