Fantastic! I know, when my husband says "That was good stuff woman", it's a keeper. I actually used potatoes, sliced carrots and onions for my veggies and they were wonderful. Served with dressing and covered all with a little extra of the juices. Will definitely make again.

This chicken came out moist and delicious. I guess I don't much care for acorn squash, I will pick a different squash or do potatoes next time, but the butter mixture is a keeper. There also seemed to be a lot of it, plenty to tuck in to all the nooks and crannies.

Next time I need to use a larger baking pan, becuase some of the squash wasn't soft enough probably due to being piled on top of each other. Otherwise, it turned out good; loved using squash instead of the usual potatos & carrots!

I love the pairing of the acorn squash with the chicken. I think the reviewer that loosened the skin and put butter under the breast is a good idea. May I add mixing the butter with the rosemary. I would also add slices of orange in the cavity and cinnamon on the acorn squash.

Absolutely perfect! I made this for Easter dinner and it was picked clean by the whole family. The acorn squash was an excellent compliment to the chicken. One trick I have learned with cooking poultry is separating the skin from the breast and putting some of the butter mixture in between the skin and the meat. Makes it extra tender and adds a little extra flavor. I wouldn't change a thing about this recipe and strongly recommend!

Very tasty and easy to prepare. Be sure to use a thermometer, my bird was done much quicker than the recipe called for. Now my husband says we won't need to buy the rotisserie chickens at the supermarket!
