I made this twice, two days in a row, at the request of my husband. That should tell you how wonderful this tastes! But I also wanted to try it the second time because it kind of collapsed on me the first time. Rolling up the meatloaf with the cheese and spinach is easier said than done. The first time I made this, the meat mixture completely ripped apart as I was rolling it up; the second time, I added a bit more breadcrumbs. It still ripped, but I was ready for it, and quickly sealed the holes before it could get too out of control.
Both times, though, the flavor and texture of this meatloaf were off-the-charts amazing. Just be prepared to do some damage control as you're rolling the meat up.
