Not much harder to make than plain meat loaf, this dressed-up version is nice enough for company.

I absolutely love this dish; and my family love it as well. It's very easy to make has has a lot of flavor. Goes great with a salad and garlic bread.

Great recipe , easy prep and outstanding taste. Next time, and that will be soon, I will add some mushrooms and some red pepper flakes. Ditch the wax paper suggestion...it turned to mush trying to roll this bad boy...stick with foil. This was so good!

Making dinner is a rare thing for me, but I have been craving meatloaf for some time. I tried this and it will be very hard to go back to regular meatloaf again. INCREDIBLE taste. My only issue was rolling the meat together, but that will come with practice. LOVED THIS dish.

I read a lot of the reviews before I made this to get some ideas for rolling the meatloaf. I used waxed paper rather than tin foil. I did not have any problems. My family absolutely loved this meatloaf!! This is a define keeper. Something I will make when my parents come for dinner.

I tried this meatloaf for the first time today. Although it was easy to make it was too spicy for us. I felt there were too many Italian seasonings so the smell and taste was overwhelming. Everyone else liked it here so maybe it is just us. I would not make it again.

for the one who was having hard time w/meatloaf ripping; press half ot meat mixture down in pan; put filling on top, spreading all over to the ends and finish w/rest of meat mixture on top. it will be good and also you could ice it w/ mashed potatoes on top after meatloaf is cooked, lather potatoes on top and brown top. very good. hope this helps, w/or w/o mashed potatoes. This is quite good. I’ve done this before. A variation that I use is to substitute the spinach with fresh basil and mozzarella cheese. I also roll it out, firmly, on a waxed paper lined small sheet pan. The waxed paper is much easier to manipulate than tin foil and it’s easier to see when things are going awry.

Very good recipe and my husband and two young sons loved it as much as I did! Will have to place the cheese and spinach more in the middle before I roll it up next time so it seals a bit better on the ends.

I made this twice, two days in a row, at the request of my husband. That should tell you how wonderful this tastes! But I also wanted to try it the second time because it kind of collapsed on me the first time. Rolling up the meatloaf with the cheese and spinach is easier said than done. The first time I made this, the meat mixture completely ripped apart as I was rolling it up; the second time, I added a bit more breadcrumbs. It still ripped, but I was ready for it, and quickly sealed the holes before it could get too out of control. Both times, though, the flavor and texture of this meatloaf were off-the-charts amazing. Just be prepared to do some damage control as you're rolling the meat up.
