Roasted Red Pepper and Artichoke Dip

Roasted red peppers add color to a one-dish dip requiring 10 minutes of prep time.

Ingredients

jar (6 to 7 oz) marinated artichoke hearts, drained
1/2
cup drained roasted red bell peppers (from 7-oz jar)
1
package (3 oz) cream cheese, softened
1/2
cup sour cream
1/4
cup chopped fresh parsley
Assorted crackers or vegetable chips

  • 1 In food processor, place artichoke hearts and bell peppers. Cover and process until coarsely chopped. Add cream cheese, sour cream and parsley. Cover and process just until blended.
  • 2 Garnish dip with additional chopped fresh parsley if desired. Serve with crackers.

I made this for my guests at Thanksgiving and it was very well received. I liked the illustrated idea of putting the dip into a red pepper, but couldn't find anything but small red peppers. Didn't use the lower-calorie options suggested. I have been asked for the recipe by my daughter who is an expert cook.

Good flavor. I didn't have any parsley, so I added some fresh garlic chives instead. I used the lower fat/calorie options mentioned and my dip was very liquidy. Aside from being harder to "dip" from, pretty good.

This is such a quick and great tasting appetizer. Wonderful to have on a night with friends or family over for dinner or to eat while watching your favorite movie or sport. The peppers add a yummy taste and we all love artichokes too. I have another recipe with artichokes, mayo and parmesian cheese mixed and then baked and for a small kick add some chili peppers. We love to eat it with tortilla chips. For a lot of color on the table use a red, green and yellow bell pepper and add some strips of all of the colors of bell peppers and some other veggies ie celery sticks for dipping. My family eats this all up.
