Refrigerated pie crust is the flaky base for a topping of rich goat cheese and colorful roasted red peppers.

Great taste! I substituted the pastry for crackers, topped the cheese with Costco sliced/oven roasted turkey breast, and baked for 15 minutes on 350. The turkey should start to get brown around the edges around the 15 min mark. Topped with roasted peppers mixture. I didn't like all the oregano, so I scraped most of it off, but did add the balsamic vinegar as one of the members suggested. Quick and easy to make.

Made these for the New Year's Eve party we went to last night. Big hit! Really yummy! So easy to make! We made a small tweak to the second batch - we added 2 to 3 teaspoons of balsamic vinegar to the roasted red pepper mixture and topped the second batch with it. Super delicious! Thanks for the awesome recipe!

These little bites are delicious! I substituted basil for the oregano, and formed the pie crust circles in a mini muffin pan to make cups to hold the roasted red pepper mixture. I will make these again for future parties.
