Disappointed. I don't know how any one gave this a great review. Our pork chops were leather, I even read the other reviews that stated that the time was too long, so I only had the pork in for 20 minutes. I put the vegetables in earlier for the full 45 minutes. I thought the flavoring was okay, but to cook pork chops at 425, is way to high. I think the vegetables should be cooked in the oven for the time they say, or do everything on the stove.

My husband really liked this, but I thought it was just 'eh'. I used boneless pork chops and after 45 minutes they were way overcooked and dry. I didn't have any tomatoes so had to leave those out. Maybe it would be better if it had the tomatoes in it.

I made this dish for my husband and I tonight, and we LOVED it!! We are trying to loose a little "happily married" weight by cooking at home and our first try was a success!! We only cooked ours for a total of 45 min, but it was moist and tasty!! I wish the potatoes had cooked a little longer- but even that wasn't bad!! Enjoy!! :)

My husband and I loved this, too. I did read reviews first and reduced the cooking time. I also used garlic and just a pinch of sea salt instead of garlic salt Also increased herb mixture to have plenty for the vegetables. I am fixing it for the 2nd time tonight!

We liked this easy one-pan meal. Be forewarned, though, the vegetables SHRINK in the oven. Put LOTS of veggies in the pan!

This is way too good and way too easy not to make! Great that it is healthy and gluten free. I have been roasting vegetables for years and now I will roast my chops as well. Easy & good.

I wish I hadreadthe reviews BEFORE I made this. it was very tasty, but I used boneless pork chops, and still followed the cooking time, so they were WAY over done. I will definitely make this again, but next time I won't cook it for as long...and I'll add more veggies!

My husband and I absolutely loved this. This is a very, very tasty low calorie dish. I did double the herb mixture so I'd have enough for the vegetables and everything came out absolutely perfect. I do recommend checking the chops early and often so they don't overcook.

Yummy! My husband loved it. I added more veggies, but had to decrease the baking time since I used boneless pork chops. The aromatic flavors are very nice.
