Roasted Pepper Mozzarella Angel Hair Pasta

So much flavor in this dish - roasted peppers, fresh, melted mozzarella, and wheat angel hair pasta. Yum!

bell peppers (I use 3 red and one orange) charred with skins removed, then chopped

pounds multi-grain angel hair pasta

tbsp olive oil

cloves finely chopped garlic
1/4
cup finely chopped onion
1/4
tsp red pepper flakes

tsp olive oil

ounces fresh mozzarella - cut into small pieces
  1. Char 4 bell peppers (i use 3 red and one orange or yellow) and remove skins when they are cooled.
  2. Cook 3/4's pound multi grain angel hair pasta. While this is cooking, put 2 tablespoons olive oil in a frying pan and on medium heat cook garlic and onion. Add 1/4 teaspoon red pepper flakes and cut up previously charred peppers.
  3. Drain cooked pasta and add 2 teaspoons of olive oil to hot pasta. Toss to coat pasta.
  4. Combine pasta with peppers, garlic and onions.
  5. Lastly, add fresh mozzarella and toss all together. Put into a greased 9x9 baking dish.
  6. Bake covered at 350 degrees for 30 minutes.
