This chicken was soooooo good. I didn't let my chicken thaw out all the way because it usually gets too dry. Will use totally thawed chicken next time though. This time it was half crunchy and half mashed potatoes. As with all recipes, after the first time you make it, you find a gazillion things you would do next time, and with this one there will definitely be a next time.

Definitely a new family favorite! Chicken isn't usually my favorite, but I love this recipe. I used chicken breasts and soaked them in some light salt water for about 8 hours first. Then I pounded them down to make sure they weren't too thick. Also, I didn't have cayenne pepper so I used about 1/2 t. of Red and Black pepper. I made my own buttermilk and put on thick coatings of potato buds. It was perfect - Juicy and full of flavor!

This is a good recipe. I had a problem with the temperature to as mentioned by another post. next time I would probably add another seasoning to the potato mixture. but all in all the chicken tasted good as is and very juice.

Oh man this stuff is soooo good! My husband loves it and I've made it for my parents too and they liked it as well. Like other people have said, I add some other seasonings to the mixture. I add Lawry's Salt Free 17, some garlic powder, and Lawry's Seasoned Pepper. This meal is excellent w/ mashed potatoes because it's so good to mix in some of the left over crispies in it! YUM! :)

Very flavorful and moist chicken. I used thin chicken and lowered the temperature to 375 and cooked for 35-40 minutes.

Good Stuff. Easy to make and very moist. My husband thought it should have been crispy. May need to cook a little long if that is the case. It was good just like it was. It could not have been too bad because my husband had seconds and thirds.

This meal was so easy to make! The potato flakes made an excellent breading, and the cayenne pepper made the flavor pop! I have a hard time finding meals to please every member of the family, especially my teen, but ALL were raving about dinner tonight!
