Roasted Chicken and Cranberry Croissants

Ingredients

  • 1/2 cup whipped cream cheese spread (from 8-oz. tub)
  • 1/2 teaspoon grated orange peel
  • 4 croissants, split
  • 4 leaves Bibb lettuce
  • 3/4 lb. thinly sliced roasted chicken (from deli)
  • 1/2 cup whole berry cranberry sauce (from 16-oz. can)

    In small bowl, combine cream cheese and orange peel; blend well.
  • 2
    Spread cream cheese mixture on cut sides of croissants. Layer bottom halves of croissants with lettuce and chicken. Top chicken with cranberry sauce. Cover with top halves of croissants.

  • The air whipped into whipped cream cheese creates its light, fluffy texture.
  • Regular cream cheese can be used in place of whipped cream cheese. Use it as is, or beat it briefly with an electric mixer at high speed.
  • Thinly sliced roasted chicken from the deli is best in these sandwiches, but packaged sliced chicken breast for sandwiches can be used.
  • If desired, the cranberry sauce can be pulsed in a food processor to make a spreadable fruit.
  • Bake frozen seasoned potato wedges to serve with these sandwiches.
