Ingredients

Muffins

cup orange juice
1/3
cup honey
2
tablespoons vegetable oil

egg
1 1/2
cups Original Bisquick® mix
1
cup Fiber One® cereal, crushed
1/2
teaspoon baking soda
1/2
cup plus 2 tablespoons salted sunflower nuts, toasted

Creamy Orange Spread

oz 1/3-less-fat cream cheese (Neufchâtel), softened
2
tablespoons orange marmalade

Directions

  • 1 Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray or line with paper baking cups. In medium bowl, mix orange juice, honey, oil and egg.
  • 2 In large bowl, stir Bisquick mix, cereal, baking soda and 1/2 cup of the nuts. Stir orange juice mixture into cereal mixture just until moistened. Spoon batter into muffin cups. Sprinkle with remaining nuts.
  • 3 Bake about 20 minutes or until golden brown. Immediately remove from pan.
  • 4 In small bowl, mix cream cheese and marmalade until well blended. Serve muffins with spread.

I made these today. The only change I made was using unsalted sunflower seeds and added about 1/3 cup dried cranberries. They were salty enough without the added salt from the seeds. Baking for 20 minutes was too long. They came out over browned and dry. I would start checking them at 15 minutes. Also, not much orange flavor. If I make them again, I would add some orange zest. Not very sweet, so the spread (which I haven't tried yet) is probably a good balance for the muffin. I will probably try them with plain cream cheese and an extra drizzle of honey.
