package (7 oz) fideo pasta or vermicelli or angel hair pasta, broken into 1-inch lengths

cup finely chopped onion

clove garlic, finely chopped

cups converted long grain white rice
4
cups chicken broth

teaspoon salt
Fresh cilantro leaves, if desired
  • 1 In 12-inch skillet, heat oil over medium-high heat. Stir in pasta; cook and stir 3 to 5 minutes or until golden brown. Stir in onion and garlic; cook 2 to 3 minutes, stirring constantly, until tender.
  • 2 Stir in rice; cook 30 to 60 seconds or until light golden brown. Stir in chicken broth and salt. Reduce heat to low; cover and cook 20 to 25 minutes or until rice is tender and liquid is absorbed. Garnish with cilantro leaves.

This is a great base dish. Add some veggies and meat and you have a whole meal. Quick tip: I buy the vermicelli already broken up at my local grocer. One less step and uniform pieces. If you can't find it in the pasta aisle, check the international food aisle.

Deeee-lish!! My kids asked for more, more, more! I did use butter instead of olive oil but we just went on a longer bike ride to work it off :)
