Rice Stuffing

Ingredients

tablespoons butter or margarine

medium stalk celery, chopped (1/2 cup)

small onion, chopped (1/4 cup)

cups cooked rice

cup chopped walnuts
1/3
cup raisins
1/4
teaspoon paprika

slices bacon, crisply cooked and crumbled

  • 1 Melt butter in 10-inch skillet over medium-high heat. Cook celery, onion, salt and pepper in butter, stirring occasionally, until vegetables are tender; remove from heat.
  • 2 Toss celery mixture and remaining ingredients. Use to stuff one 8- to 10-pound turkey.

Expert Tips

Substitute 1 cup cooked wild rice for 1 cup of the cooked rice and substitute pecans for the walnuts. Omit raisins and paprika. To cook wild rice, heat 1/3 cup uncooked wild rice and 1 cup water to boiling, reduce heat to low and simmer about 40 minutes or until water is absorbed.
