If you have the time for a meringue, this is a great recipe! I have different family members that eat a lot of rhubarb and I made sure to send the recipe to them.

Loved this Rhubarb Meringue Dessert! Easy to make, and very flavorful. At this time I believe this is my favorite rhubarb recipe. I will keep this recipe to pass on to my daughters.

Everything was wonderful with this recipe. The crust was flaky. The filling had "just right" sweetness. The meringue turned out thick, sweet and fluffy. I enter things in our State Fair, This one could be a blue ribbon winner. Rhubarb Meringue Dessert definitely is a keeper!

This is far the best rhubarb recipe that I have ever tried, I have been making it for just over a year now and everyone who tries it, wants the recipe, throw away your old rhubarb crumble recipe and have a new favorite with this one, even rhubarb sceptics will love this dessert! Try lining your pan with foil, then the dessert pops right out, peel away the sides when cool and cut into bars. I cut the edges out for a better presentation.
