Rhubarb Cheesecake Bars

These are just sooooo good and easy. I've made them with various fruit and homemade cream cheese and jam, they never fail to please with the oats giving them extra flavor.

Great with blueberries too. First used 4 cups of blueberries, then 2 pounds of blueberries that was even better. If using rhubarb add a little more sugar to the batter works great.

I have been making this recipe for the past year and everybody loves it (even the kids & my picky husband) My sister in law requests it every time she comes to visit and does not want to share it. She was to keep the leftovers to take hoime with her. It is also very good made with blackberries.

I thought this recipe was awful. I agree that after reading such rave reviews, I was very excited to try it. My husband and I each tried one square, then I pitched the rest. What a waste of good rhubarb!

OMG!! I took this to work and my co-workers devoured them. The suggestions were great. I used 4-5 cups rhubarb. And I used the caramel ice cream topping to drizzle over each serving when people dish out their treat. I was told to tell people that these bars are out of this world. If you want to try something different for Cheesecake and Rhubarb this IS the treat.

After reading such rave reviews I was very excited to make this recipe using the abundance of frozen rhubarb from the garden. It smelled wonderful, however the taste was just not there, very blah. I added an extra cup of rhubard even topped it with caramel sauce when serving. I will not be adding this recipe to my box....bummed!

This recipe was delicious. It was a big hit with my family up at the resort this year. The topping didn't seem to turn out quite right, the texture was not on, but it didn't affect the taste. I thought the amount of cream cheese is perfect, although it does downplay the rhubarb taste. Next time I will try adding strawberries, that sounds great.

This was excellent. The recipe is so easy to fix and such a crowd pleaser for all ages. It does not last long so make the full batch if you can. My first crowd was not sure of the rhubarb so I cut the recipe in half and it was gone at the first meal. The drizzled caramel is a bonus but it can be optional because it is so delicious.

I followed this recipe exactly and was sooo disappointed. Rhubarb is my favorite, so I was looking forward to these and could hardly wait the nearly four hours from start to finish. I cooked the bars as directed and they never seemed to brown on the top. The outer edges were starting to get too brown after 50 minutes, so I pulled it out. The top tasted like raw flour! Ick! I don't think this had nearly enough rhubarb flavor either. I'm so bummed....
