We loved this! Made exactly as the recipe said. My husband who never likes leftovers, asked for it the next night. Only problem was the heartburn.

I made this last night for dinner...hubby & I both loved it. The only thing I might do different, would be to only use one 3.3 oz package of the potatoes. Putting all of it in the bottom of the pan. But overall I still give it 5 spoons. As far as the previous comments about the corned beef. I think the recipe called for sliced corned beef. I bought a half lb at my meat market and cut into pieces as stated in recipe. Hubby & I both thought it was plenty of meat.

I made this recipe yesterday. I could not believe the recipe called for six ounces of corned beef to serve nine people??!! I bought corned beef (2 lbs), cooked it and used that instead of packaged corned beef. The recipe was tasty. Even with using two pounds of corned beef the recipe serves tops six individuals.

The idea was good but I prefer fresh foods so I made real mashed potatoes and used left over corned beef instead of canned. The ruben has always been a favorate of mine and this is very good with the adaptations.

I am about to attempt this dish...it looks great. However, I plan on doubling the recipe as many did. If I do so, do I use a 9 x 13 pan instead of an 8 x 8??

I made this for my hubby & I. After reading some of the comments I only used one pkg. of potatoes. It was more than enuf potatoes for us as my dh is diabetic and we try to watch his carb intake. We REALLY liked it. I'm making it again today, but will use rye bread instead of potatoes and mix some Thousand Island drsg. into the kraut--saw that in another recipe for a Reuben casserole. I'm expecting this to be really good too.

I love Reuben's. This was okay, but probably because I don't think I had enough corned beef in it. I'll try again. Since I'm only cooking this for myself, I used a single pouch of potatoes. Made as directed on the pouch (herb & butter style). Also added mustard to the water before mixing the potatoes in. I layered as in the recipe. Put thousand island dressing on top of the sauerkraut. Next time I'll used more corned beef. Thanks for the idea of this recipe.
