Refried Bean Roll-Ups (lighter recipe)

Ingredients

can (16 oz) Old El Paso® fat-free refried beans
1/2
cup Old El Paso® salsa (any variety)
1/2
teaspoon chili powder
8
fat-free flour tortillas (8 to 10 inch)

cup shredded lettuce
1/2
cup shredded Monterey Jack cheese (2 oz)

  • 1 Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.
  • 2 Spoon about 1/4 cup of bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with addiditional salsa if desired.

The is no greater shame than to go on a cooking websight and look up how to make "refried beans" and the recipe calls for a "CAN of refried beans." Have you lost your minds? Do you think that's a recipe? What planet is Betty Crocker from? The planet, LAZY? Lacking Aprons, Zeal and Yeast!

A huge hit. I made a double batch and they lasted for lunch and dinner. However, they were gone in a day. Super easy and healthy, especially with Whole Wheat tortillas & Fat Free Sour Cream. The Lettuce is easily substituded with Raw Spinach. I advise to adding your own home-made Taco Seasoning for that extra kick.
