cup Ricotta Cheese (Part-Skim)

teaspoon lime rind

tablespoon lime juice

cup finely chopped fresh basil

teaspoon salt

teaspoon black pepper
  1. Cook the pasta according to package directions. Drain, reserving 1/4 cup cooking liquid.
  2. Combine ricotta,basil,lime juice,lime rind,salt,pepper,and reserved cooking liquid in a large bowl.
  3. Add the pasta, and toss to combine. Garnish with lemon wedges, if desired. Serve immediately.
