Made these over the weekend for a birthday celebration and was surprised by how quickly they came together! They really were no harder than baking a bar or making a catch of cookies. I also loved how the fresh fruit cut the sweetness of the marshmallow filling. Next time I will use an ice cream or cookie scoop so the pies are more uniform in size. All in all, this is a great red velvet recipe! Impressive, festive and easy.

The cake recipe was awesome, but I did make a couple of adjustments... I left out the red food coloring, and substituted the filling with home made cream cheese frosting from my Betty Crocker cookbook: 1 8oz pk of cream cheese, 1/3c butter (both at room temp) 2c powdered sugar and 1t of vanilla. Beat all ingredients until smooth! : D Everyone loved them; including my cousin. She never bakes but after giving this recipe a taste, should couldn't wait to get home and give it a try!

I made this a few days ago for work and my co-workers loved it. It was so good, one of my co-workers asked me to make some for her for a babyshower. I made the filling with cream cheese frosting. 1 (8 ounce) packages cream cheese, softened 1/2 cup butter, softened 2 cups sifted confectioners' sugar 1 teaspoon vanilla extract

Fantastic! I made Red Velvet Cupcakes from scratch and these Red Velvet Whoopie Pies for an event and fully expected my "foodie" friends to rave about the scratch cupcakes rather than the Whoopie Pies (they were so much easier and I felt like I was taking a shortcut by using cake mix, pudding and marshmallow creme vs. scratch ingredients). Interestingly, it was unanimous - the Red Velvet Whoopie Pies were the HUGE hit. I made them smaller than the recipe called for, but made extra filling -- and they still felt large. I think next time I will make them even smaller (like sandwich cookies) and stick with a more generous portion of filling. I didn't use the berries, but can tell you the outside was moist and flavorful and the inside was yummy!

Made these with my daughter for her birthday -- they were super simple and made 14 BIG ones (1 1/2 scoops from a cookie scooper). Per her request we omitted the food coloring & berries. But they turned out GREAT! Will make again!

I made these using a small ice cream scoop. Got 30 mini sandwiches. This was the perfect size just enough to get a taste. Also only made half the filling and still had enough leftover to lick out the bowl. Didn't put the berris in as I was taking these on a road trip. They froze really well for the trip.
