I left out the food coloring and also used a different frosting recipe for the filling. When I made the batter, it wasn't as stiff as I expected so I baked one cookie to test it. It looked good but wasn't very sweet so I added about 1/4 cup of sugar to the batter/dough. I found the cookies to be verrrry dry. They did taste okay though, especially with the filling. If I make them again, I'll try adding more butter or some oil to moisten them up. I wouldn't suggest making this recipe unless you're willing to play with it to make it better.

I wanted to make these for my mother (a diabetic) using splenda. these didn't come out like the ones using the cake mix - not at all flat or too fluffy. I think the liquid needs to be increased. will try these again with more liquid.
