I am very disappointed in this frosting! I was so excited about the idea of a marshmallow buttercream. I followed the measurements exactly and ended up with a runny mess that, while sweet and yummy, didn't taste anything like marshmallow. It was so runny, it wasn't functional as a frosting. I decided I would use this mixture as a filling for my cupcakes instead of a frosting and would frost them with my usual recipe. I should have put it in the garbage. I filled the cupcakes and immediately put them in refrigerator, hoping the chill would help the runny middles to set. I pulled them out to frost them and found that the cakes were now in puddles! The mixture had completely liquified. Unacceptable. I decided to call them a tres leches cupcake and served them anyway. They were very yummy, but sopping wet and not at all marshmallow-flavored.
