Create a colorful, classic side dish - red cabbage with tart apples.
tablespoons butter or margarine
medium unpeeled tart cooking apples, sliced
medium head red cabbage, coarsely shredded (8 cups)
cup red wine vinegar
In 4-quart Dutch oven, melt butter over medium heat. Add apples; cook 5 minutes, stirring occasionally.
Stir in remaining ingredients. Heat to boiling. Reduce heat; cover and simmer 35 to 40 minutes, stirring occasionally, until cabbage is tender.
Jazz up this classic cabbage dish by adding 1/2 to 1 teaspoon of caraway seed, celery seed or fennel seed. For a spicy-sweet note, add 1/4 teaspoon each of ground cinnamon, ground cloves and ground nutmeg.
Purchase preshredded cabbage in the produce section or deli at your supermarket. If you choose to shred your own cabbage, you can do so using a food processor up to one week before, and refrigerate it in a plastic bag.
