Yummy! I made this for a Cinco de Mayo party and everyone loved it! It was so easy and very delicious. I used the electric knife to cut the meat into 1 inch chunks as others had suggested. I made 2 1/2 lbs and only added one can of chiles because I used medium salsa and I didn't want to make it too hot.

Made this tonite and it was delicious! Very flavorful with the salsa and chile and beans. I also added some avocado and sour cream on the side mmmmm Definitely a recipe keeper.

I fixed this one day and tried it the next wrapped in a burrito size flour tortilla with a little cheese. Yummy! Before trying it, I thought it might have an acidic taste because of the salsa and the chilis, but that's not the case. This recipe has a wonderful spicy flavor that needs nothing more to enhance it. Yet, it isn't spicy hot either. Will I fix it again? You bet I will, many, many times!

Really good! It was easy and fast to put together in the morning, and wonderful to come home to after work. I used cheddar cheese and served it with rice.

We love this recipe! So easy and healthy. We have served it over rice and baked potatoes. And it reheats really well. I have found that using an electric knife makes cutting up the meat so much easier. I now double the recipe because there wasn't as much leftover as I had expected since we didn't just eat seconds, we also had thirds of this great pork!!!!

This was a good recipe. I would definitely serve it over rice as the sauce is not thick enough to be served easily in pita bread. I will make this one again.

I love this recipe! I have given it to all my family and friends. The hardest part is cutting up the pork, but it makes 4 meals for 2. We like to serve in pita bread with a bit of pepper jack cheese and sour cream.
