keep adding peanut butter until it smells tasty, or just buy some asian peanut dressing

It was easy to make this salad. The dressing was especially easy and everybody at the potluck luncheon loved this salad. I used crunchy peanut butter and traditional chow mein noodles, instead of the recipe dictates. This is a great salad for a "presentation" meal. Use a very large platter and arrange lettuce across the platter, putting chow mein noodles in a circle around the perimeter. I also used thinly sliced cucumbers, overlapping them for a pretty circle if white against the green. The chicken/onion/parsley mix was mounded in the center and the dressing and peanuts were strewn over all. I would be tempted to use shredded carrots next time. I also modified the lettuce by using a mix of torn green leaf lettuce with a Spring mix with herbs bag o' greens.Bon apetit!
