Comments: It was easy to make this salad. The dressing was especially easy and everybody at the potluck luncheon loved this salad. I used crunchy peanut butter and traditional chow mein noodles, instead of the recipe dictates. This is a great salad for a "presentation" meal. Use a very large platter and arrange lettuce across the platter, putting chow mein noodles in a circle around the perimeter. I also used thinly sliced cucumbers, overlapping them for a pretty circle if white against the green. The chicken/onion/parsley mix was mounded in the center and the dressing and peanuts were strewn over all. I would be tempted to use shredded carrots next time. I also modified the lettuce by using a mix of torn green leaf lettuce with a Spring mix with herbs bag o' greens.Bon apetit! |
