Comments: Our children, intolerant of many foods, LOVE these as much as the adults! Also, instead of a buttercream frosting as listed, we used a "royal lemon icing" so they could be stored on the countertop the day before a party. Just used 1 Cup Powdered Sugar, 1 1/2 TBSP Fresh Lemon Juice, and 1 tsp (or so) of finely grated Lemon Zest. It was a great glaze and kept the cupcakes moist and tasty. |
