I have made these several times. A BIG HIT EVERYTIME. I made these to the recipe and thought they tasted wonderful and so did everyone else. Using fresh lime zest makes a difference. I did line the bottom of my pan with parchment paper. Lifted them right out of the pan, made it very easy to cut into squares. I had people who said they didn't like coconut eat more than one bar.

These cookie bars were a huge hit each time I have made them! I also learned after the first time not to bake the cookie dough so long and I also added two packs of the lime flavored powder that you add to water and it helped with the lime taste.I had to share the recipe every time I have served them!

After reading all the fabulous reviews of these bars, I was very excited to prepare and take them to a family gathering. First off, the cost of the ingredients necessary to make them were rather expensive. It was also somewhat time consuming, between refrigerating and adding another layer and so forth. I got them out at our gathering and everyone was saying YUM. After tasting, I really felt they were rather bland and didn't have much flavor. I had even read prior reviews and added some extra 100% lime juice to the mixture, but it was still flavorless. No one really commented saying they were tasty or delicious either. I won't be making these again.

I made this and followed the recipe exactly. They were wonderful! A huge hit, even with the kids. They are very rich so a small piece is actually a good serving size. I am not a huge coconut fan, but loved these. There is a lot of waiting time but they were really very easy to make.

yummy! made this for a party and it was a huge hit! takes a while to make with all the cooling time needed. overall, easy to whip together and very yummy!

Made these for my husband's Bible study group and they raved over them. An interesting thing happened when he got into his car to drive home, amazingly the first song to come on the radio was "Lime in the Coconut", can you believe that? Oh by the way I too will bake the crust less time, especially since it has to bake some more after you put the cream cheese mixture on top.

I made these for my husband's work. I make him a homemade dessert (treat) every Friday to take to his co workers and have been doing this for several years. These were such a big hit, they were gone before he got back around to his own office! Everyone loved them and they have already asked for them again! I also added a little zest to the cream cheese mixture before I baked it. They were awesome! Printing out recipes for him now to take back to work!

Served this at my nieces wedding rehersal and had to send recipes to a whole new bunch of friends. They LOVED it and it was so easy. Thank you for such a great cookie.

Got RAVE reviews for this one!! All but a few pieces were gobbled up for the Memorial Day BBQ we attended and I'm really glad there were a few pieces left, because I got to eat them both! I will definitely make this again,but I might add just a few drops of green food coloring just for fun. I may try to adapt this to an actual cheesecake version, so I'll let you know how it goes...

made this for the first time, and followed recipe to the letter and all came out great. many request for the recipe. I think it needed more lime. and several people didn't believe me when I said it had a whole can of frosting on top. big hit, and will make again. hopefully the cream of coconut will go down in price.

Loved them! Bake the cookie crust 3 min less though. Guests at my picnic loved them!!! Will make them again.

This was really good, could use a bit more lime. One thing I discovered is DO NOT bake the crust as long as they say at the beginning. I went against my better judgement and left it in until it was lightly browned and at the end, it is VERY hard and it takes some muscle to get out of the pan. I think if I would have taken it out originally when it was still pale, it would be better. Still VERY good!!

I too wanted to like these. They were too sweet for us and not enough lime. Depends on your preference I suppose. I took this to our Mother's Day dinner and I didn't hear any comments. Usually everyone is asking what I will be bringing to the gatherings. This will not be on my 'keeper' list.

They look so good and they sound even better. I made them and brought them to work but they were not a hit. They are much too sweet and you cannot taste hardly any lime. I won't ever make them again. Sorry. I wanted to like them.

First of all I am a coconut freak...love key lime pie and cheesecake, so this was a no brainer for me. I just made these for a work picnic tommorrow. I didn't frost them and I plan to just top them with some whipped cream, toasted coconut and lime zest tommorrow. I sampled a little bit and OMG soooo good. I can't wait to see what my co-workers think!
