Comments: Instead of putting the corn and tomato mixture to the side, I drained the corn and added it with the tomatoes to the skillet and cooked it along with the chicken and peppers.
Also I used a pineapple salsa which gave it fantastic flavor and paired it with fresh pineapple.
Definitely delicious. I'm going to definitely make it again! |

Comments: Made this tonight. Two differences: I didn't have any tomatoes so I left them out, and I used red pepper instead of green pepper. I seasoned the chicken more (due to the other reviews) with garlic powder, salt & pepper, and a little chili pepper as well as the cumin. I thought it turned out pretty good and it was very simple. A nice change from what I usually fix. My husband said it was ok. I will probably make it again but it won't be a 'regular' in our house. |
