This is just Fantastic as a side! Easy to make and full of flavor. I omitted the bell pepper, but would not hesitate to use it. Would be good served with Asian style grilled meats.

This was really good and easy to make. I added some chopped cilantro to the dressing for a little more pizazz.

I was hesitant about the ramen noodles, but they add a pleasant crunch to this light and yummy salad. I added thin strips of cooked flank steak that marinated in red wine, garlic, soy sauce and garlic for a few hours. Good for light summer fare.
