I have had this recipe for over a year and make it almost every week. It is delicious! It is just my husband and I, but I double the recipe so that we can have leftovers the next day. I add a little extra rice because every time I've followed the recipe exactly it comes out a little runny, but still delicious. I add about 1/4 c. more brown rice (only 1/8 cup if you are not doubling it) and it turns out perfect. I've found that you can add a little extra corn (there is already some in the soup) and double up on the number of tortillas and beans used if you want it to be a little more filling. It does taste great if you add a little salsa onto each serving as well.

I am going to try this and think it would be really good with flavored tortillas, like spinach.

This was THE BOMB!!! Yummy. I have a larger family so I used more chicken, 2 cans of soup and more brown rice. I seasoned the chicken alot more too.

This was great--easy to make, tasted great, and low fat/low points! I have given out this recipe to several of my friends. Can't wait to make it again next week. I did have to substitute a Campbell's low cal soup since my store did not carry that flavor of Progresso.

A quick and easy meal! The flavor was incredible! We cooked our own chicken breasts and cimply added our own spiced to it, as well as the refried bean mix. Spicing it up with a can of green chilies! A definite meal again at our house! And I can't wait to have it for leaftovers today for lunch!!

I love to cook but I am always afraid to try new things incase I dont like them. But I made this recipe and I loved it and so did my husband. I could make once a week and be happy. It is quick and easy and doesnt cost much. LOVE LOVE LOVE IT!!!

This recipe is absolutely delicious! My boyfriend can't get enough of it. We both love it, it's pretty easy to make and tastes great! I would definitly recommend this recipe.

Excellent low calorie dinner. Very good flavors and great texture. Half of the casserole is only 6 points on Weight Watchers flex plan and is very filling and satisfying. Also fast and easy to prepare.

I really, really liked this recipe! I used Fat Free flour tortillas instead of the corn tortillas. I also added half of a chopped onion to the chopped red pepper and added a small can of chopped green chiles for additional flavor. I layered the ingredients in a round casserole dish (sprayed with PAM) that fit the tortillas exactly and I topped each serving with salsa. YUM! (the onion, green chiles and salsa don't add any calories or Weight Watchers points...so what the heck??) I will definitely make this recipe again.

This is a great recipe. The Progresso soup that is used makes this dish a hit. Very yummy!!

Great recipie! I prefer the whole wheat tortillas and found they worked well. One quarter of the dish was more than filling. I served with a side salad for extra vegetables. Definitely adding to the meal rotation.

This was way easy to make, and sooooo good!!! Reminded me of something from Baja Grill that they called Mexican Pizza. You will love it! It doesn't look like 1/3 of it will be enough (thats the serving size.) But I ate half and it filled me up more than I wanted it to.

I made this exactly as listed except I had low carb Mayan wheat tortillas. Next time I'll add onions, mushrooms and onions. Husband liked this a lot!

This was pretty good - we added fresh chopped onion, jalepeno and tomatoes to add some flavor and fresh veggies.
