We made this soup and it was fantastic. The only change we made was adding a can of "mexicorn". I am planning on making it again tonight but plan to try some suggestions like adding cilatro while cooking. I may use a can of green chiles instead of the jalepeno, but not sure. It was sooo good just how the recipe stated!

This was fantastic!! I will be making this again. I added an extra jalapeno chopped up and a little bit of frozen corn. I also added some cilantro while simmering. And added an extra cup of chicken. I omitted the avocado after seeing what it looked like after peeling it. It was too gross looking. I threw it in the garbage. I had never touched one before! My daughter will be coming by for leftovers tomorrow. I can't wait to eat it again!!!!

This was amazing! I did make some changes - I used crumbled tortilla chips instead of making my own; used 2 cartons chicken broth instead of 1; used 3 cups shredded chicken; added 1 can black beans, rinsed and drained; added 1 bag frozen corn; added cumin, onion powder, and garlic powder to taste; and used dried jalapeno pepper instead of fresh to taste. Definitely a keeper for the winter.

I cooked this for my boyfriend tonight. It will definitely be added to our list of those to have again. I also added a can of corn and peppers to the soup. I pan cooked the chicken with some seasonings before adding it to the soup. Instead of a fresh jalepeno pepper, I used canned diced peppers. The peppers definitely add to the taste.

This recipe was great for something quick and easy. It's definitely made it into the "once a month" category at my house. I did do a couple of substitutions and additions. *I didn't use a real chile, I used canned chiles. *I cut the avacado. My family doesn't care for them. *I also added a can of sweet corn to give it more color; and I remembered restraunt style tortilla soup had it as well. *In a pinch, I used tortilla chips to line my bowl and as a topping, insead of making my own. *Finally, I added the cilantro during the cooking process, rather than just as a topping. I think the flavor really made the dish. All in all, it was wonderful!

This was soooooo good!!!!!! My hubby even liked it and he isn't a big fan of soup or veggies haha. We had it with some cheese quesidillas to dip it which were perfect with it

This was delicious and very easy to make! I used a store-bought rotisserie chicken and it made everything so simple to put together. I will definitely be making this more regularly!
