I thought I'd switch colors and use cream cheese frosting and chocolate covered pretzels. Then I went to make them and read the directions closer. I still added the chocolate chips (after all, chocolate plus cream cheese equals chocolate cheesecake, right?) My seven year old pronounced them "THE BEST!", and I enjoyed them as well.

These were good, but I had trouble with the chocolate layer not sticking to the cookie layer. I used a little frosting as a glue to stick the chocolate back on after I cut them. I'm trying again -- this time I will get the chocolate mixture a little warmer and perhaps try putting it on before the bars cool completely.

This is such a simple and easy dish to make for picnics and parties when you need to take a dish to share and your time is limited. I've made a few variations to the end result. I've added chopped pecans or walnuts to the top instead of the pretzel and simply lightly press them into the truffle top before it cools. And for a demonstration of holiday treats, I put a little green icing with a candy pumpkin in the center, or a white icing dollop with a little green star shape piped in the middle with a gold dragee on top to look like a Christmas tree.

I made the Chocolate Chip Truffle Bars for my friends as part of their Valentine's Day presents and got rave reviews. I received so many calls the next day to find out where I bought them! When I told them I made them, I was asked to make them again. I even made them for a charity event and got even more praises!! I made sure that everyone knew that I got the recipe from Betty Crocker.com. I now have a new fan favorite and have been asked again to make these bars for yet another party. Tipif you do make these bars and want to keep them moist place them in a container or bag and add a small piece of bread in the bag/container.

I made these for Valentines day for my office. I had nothing but compliments. I did find that they were not as moist the next day but were still good to eat. I would make these again next year.

These bars were simple and delicious. The best part was I had all the ingredients in the pantry and my daughter and I were able to make them in no time at all. We sent them to school for her teachers and they were a big hit!! Thanks for making me look like a Baking Champ.
