Comments: I made these last year for my cookie exchange and they were the biggest hit. I won best tasting cookie and had to make additional batches for relative visiting as word spread and they became famous very quickly. They also look very festive which is a big plus if you are putting together a tray to give as a gift. Another added plus is how easy they are to make, with the bag of cookie mix and being a drop cookie so they mix up quick and are ready for baking quick too. Clean up is a little harder as you have to drizzle the icing but I put paper towels under a cooling rack and only have to clean the rack. |

Comments: I have made these a few times now - so quick and simple. Everyone loves them. Even my friend who hates coconut asked me to make them a second time. It's the first recipe with coconut she has ever liked - that has to count for something! So so so yummy! |

Comments: This recipe is easy and awesome. I have made them the last two years for Christmas. My daughter-in-law always requests them to be on the cookie tray. The coconut flavor is perfect not overpowering. |

Comments: These cookies were super easy to make and absolutely delicious. I have made two batches. For the second batch I omitted the coconut extract and the melted baking chips on top and they tasted just as good!! |

Comments: I baked a batch of these today to add to my Christmas Cookies this year. I made as directed except I did not add the coconut,(my family does not care for it) but added 1 cup of dried cranberries instead, along with the white chocolate chips. I did not have coconut extract, so added 1 tsp. almond extract and really liked the flavor. The only other change I made was not ice them. We do not care for sweet frosting, so after scooping out 1 tsp. of batter, I rolled them into balls and then rolled half of them in red sugar and the other half in green sugar, then baked as directed. I think rolling them into balls helped them keep their shape. Others reviewers said they spread out too much, but mine came out the same shape as in the picture. After cooling I put into containers with wax paper between layers and will freeze until Christmas. Kids had a sample and loved them. |

Comments: As mentioned in my previous post, I did freeze these in layers separated with wax paper inside a plastic freezer container. To serve, remove them and let them sit for approx 10 minutes at room temperature. They tasted just like fresh baked! Delicious! |

Comments: These cookies were great. I sprinkled with the red sugar and they were very festive for Christmas. They are not very soft, more chewy than soft like real macaroons. Will definately keep in my file for future holidays. |

Comments: These cookies were soooo good!! Instead of buying the sugar cookie mix, I made it using one of Batty Crocker's recipe books. I used too much white chocolate chips by mistake, so I left off the frosting. The texture of these cookies is sensational! |
