Comments: This was a very thick and hearty soup, but my husband I thought the taste of thyme was way too strong. I would probably cut the thyme back to 1/4 tsp. or omit it altogether. Other than that, we thought this was very good. A great meal to have waiting for you on a cold winter night. I did make one addition: one medium russet potato cut into bite-sized chunks (increased the broth to 4 cups). The potato pieces remained intact and with all the mixed vegetables, this was more like a stew than a soup. |

Comments: This recipe is very tasty although I odmitted the leaves. Make a home made loaf of bread to go with it and you have the perfect meal. |
