I made this dish for Christmas and everyone in my family said they loved it including me. I suppose you could add some green to it too if you wanted to by adding little green candies or sprinkles to the top of it. MMMMMm MMMMmmm good if you love mint.

I made this cake last year and it was a huge hit. It is very refreshing after a huge christmas dinner! I made this cake this year for my party at work and again, massive hit at the party. I made this cake again for my family yesterday, but this time instead of the glaze, I melted about half a bag of semi sweet chocolate chips, and covered the cake with a thin layer and refrigerated it until it made a hard shell. IT IS AWESOME! Tastes just like a peppermint patty!

This was really good! I brought it to work today and have gotten many compliments on it. A couple of people have said it was very "refreshing" After reading some of the other reviews I also used store bought frosting and it worked out well. No one has thought that the peppermint was too strong. I even added an extra "splash" of it. Not sure why some of the other reviewers thought it was over-powering. Very easy to prepare and all around great.

This cake was amazing, I don't know why some people are saying the peppermint was too strong, I actually spilled extra peppermint in mine and it turned out perfect. Don't worry about making the swirl perfect, if you just follow the directions, it will turn out. My family usually only eats one dessert at my house during the holidays, graham cracker cake, but this was devoured quicker than the old stand by! (Graham cracker cake is made by taking a sleeve of graham crackers and the icing of your choice and spreading the icing on each graham, then placing the side by side. When done with sleeve, ice outside of cake, then refrigerate overnight. The grahams soak up the moisture from the icing making this cake to die for!)

This cake was TERRIBLE! I really didn't get a lot of help eating it. The peppermint was overpowering. It was like I drank it straight from the bottle. I didn't even use a 1/2 teaspoon. I only used what I had left in the bottle, which was about 1/4 teaspoon. The only redeeming quality was the red ribbon design. Maybe a different extract would be a better choice, but I think any extract would be too strong because you're just mixing it with cake batter. It's not like when you put an extract in a cookie batter and there's other stuff in there to offset the direct taste.

I made this cake at Christmas time and thought it sounded so good. Boy was I wrong! No one liked it although it was very pretty. It sat for a few days and then I tossed it. Sorry! I usually love all of these recipes but this was just bad.

This is a very good and easy recipe! The peppermint is pretty strong so you have to like peppermint to enjoy this cake. I thought the swirls would be hard to make and wasn't sure exactly how to get it to look like the picture. Just follow the directions and it turns out just like it! And I used white icing and melted it in the microwave instead of making it, which was much faster and easier. For the topping I took advise from someone else that rated this and sprinkled crushed peppermint candies on top then placed 8 full size candy canes in the middle and just let them fall naturally. The presentation looked so good, no one wanted to cut it.

I had no problem with making this recipe. The directions were easy to follow my family and friends enjoyed the recipe. The peppermint was not overbearing at all!! This was the first time that I made a recipe and it looked exactly like the picture.

I didn't think that the cake would actually swirl, but it does! definatly add more food coloring to make it red. Mine was pink!!

This cake was wonderful. I made it for Christmas Eve and everyone loved it, including my Dad who doesn't care too much for peppermint. I didn't find the peppermint flavor too strong at all.

This cake was great a few changes should be made though %0d%0a-buy ready made icing instead off making it, I did and when the recipie said to add 1 tbsp of milk if needed, I did twice and it turned out runny. Also, don't try to move cake to a cleaner plate after icing I did and it broke in half (I was able to salvage it though) and last buy broken peppermint pieces trying to break them to small pieces yourself can be a challenge!

The cake looked beautiful... however, you must like peppermint. I ended up throwing out the entire cake, the peppermint taste was just too strong. I will make it again but not with peppermint extract.
