Comments: This is easy and delicious, and it's a perfect use for thighs. I use half of a 20 ounce pkg of chicken and all the sauce in a small crock pot with only one setting (high) and it takes about 4 hours. I save the lime and ginger until the last half hour or hour, so the flavor isn't all cooked out. Perfect for me, my husband, and toddler (I use part salsa part tomato sauce for her) with a serving for lunch later.
No, it's not like anything from a Thai restaurant, but it has flavors typical of Thai cuisine. When my husband takes the leftovers to work for lunch, everyone that smells it wants to know who has it and what it is! |

Comments: I agree with many reviewers that this needed extra liquid as it cooked in the slow cooker. I ended up adding about a cup and a half of hot water to my sauce (I had doubled the sauce on recommendation from other reviews). Honestly, this didn't taste like anything from a Thai restaurant or from my Thai receipes.....but that doesn't mean it was bad. Just didn't taste Thai. This dish has an ok flavor...nothing wonderful. Not having to spend an hour or so in the kitchen after a long day's work is a good trade off. Visually.....looks like a big pile of brown stuff. I dressed it up with crushed peanuts, sliced green onion, cilantro and fresh mung bean...still didn't look all that great. I'll keep this recipe at the back of the folder and keep trying others...not throwing it out but not going to go back to it for a long while. |

Comments: This didn't turn out well for me. I followed the instructions but the look and the smell was a big turn off. When my boyfriend came home from work he hid in his office to get away from the smell. We did eat the chicken and I made coucous to go with it. The taste wasn't horrible but I won't be making this again. |

Comments: Loved this recipe. Used skinless thigh fillets which were starting to fall apart by end of cooking time (8-9 hours) but tasted just fabulous. Added half cup of stock based on previous reviews saying dish dried up but had to actually thickness sauce in the end so next time will try without this addition. Chicken added enough moisture to sauce. Guess different slow cookers might make a difference to everyone's end results. Could add extra onion and red peppers as well. Coconut rice was perfect with this dish. Will be a definite favorite !! |

Comments: My husband raved about this dish and my teenage boys licked their plates clean! I made this using boneless skinless thighs, low sodium salsa, Simply Jif peanut butter, and a dash of lower sodium soy sauce as substitutions. I added some fresh garlic to the sauce. Not only was it delicious and extremely easy to make, it was also very good nutritionally. Change to boneless skinless breasts for an exceptionally healthy main dish. We'll have this again soon! |

Comments: We love this recipe, it is so good that I have served it to dinner guests who have all asked for the recipe. I use boneless, skinless thighs (usually 12 to 16), double the sauce recipe using hot salsa and fish sauce for a more authentic thai flavour. I am not sure what crockpot others are using but my dish has never dried out. 7 hours will do it in the crockpot. |

Comments: The closest fast food or restaurant is over an hours drive, so I am always looking for new flavors. We loved this! There was lots of juice for the rice and the chicken fell off the bone. I adjusted the recipe a little. I used a full cup of salsa and melted crunchy peanut butter before I mixed it. I cooked it on low for 3 hours and then auto for 2 more. It is a "definite make again." |

Comments: i used boneless skinless breasts, ground ginger, extra salsa & peanut butter, cooked it for 4 hours, served on brown rice...AMAZING!! Served to 3 men, ages 21 to 32, and they were literally talking about it the next day. |

Comments: I used a Rival Crock Pot, and it wasn't dried out or burned at all like other have said. In fact, the juices from the chicken diluted the sauce to the point that there wasn't very much flavor. Next time I will use medium salsa instead of mild, maybe add more soy sauce and ginger, and leave out the cilatro garnish. The chicken was wonderfully tender, and it all got eaten. |

Comments: This meal was excellent. I put in two cans of chicken broth in my slow cooker so that the ingredients will not stick to the pot. I am not a fan of thighs,I used boneless chicken breast and it cooked within 4.5 hours. Instead of rice I used plan romen noodles with the chicken and it is DELICIOUS!!! I will be experiementing different cuisines from here THANKS!! |

Comments: This recipe was definitely not a keeper - unfortunately, as I had read too late from other reviewers, this meal was dried up and unedible by the time my husband and I got home. We should to salvage it by pouring an entire box of vegetable broth into the slow cooker, but unfortunately, it didn't help much. Luckily, we made rice and broccoli...so we at least ate that. |

Comments: This is a great recipe. I made a few changes to make it even better. I used boneless, skinless chicken breast, cut the cooking time in half and also added one pack of Splenda to the sauce right before serving it.It gave it just the right amount of sweetness that oriental foods sometimes have. Everyone raves about this dish when I make it. |

Comments: This is delicious. I was preparing myself to not get too excited: it wouldn't taste like authentic peanut sauce...but I was wrong! Amazingly, it is very similar and is very delicious. ****CUT THE COOKING TIME IN HALF!! I was barely able to save the meal after checking on it half way through and finding the outer edged burnt to a black crisp!!! |
