What a fab recipe to experiment with! Thnx B.C. I added a dozen or so grape tomatoes on top of the other vegetables so it's similar in style to Italian chicken cacciatore.

I love this recipe. Simple yet delicious! I topped it with grated Asiago and Romano cheeses. The sharpness of the Asiago really added something to it. Didn't have paprika, put just a touch of cayenne pepper, celery salt and garlic powder as well. Yum!!!!

I agree with the reviews...yummy, yummy, yummy!! I did some things differently because I live in a high altitude, but I did notice alot of the reviews had the same problem - the cooking time of the potatoes. So, what I did was par boil the potatoes to soften them. I then followed the directions of placing them in the middle of the chicken with the peppers and onions, adding dijon mustard, spraying veggies, etc, then I added a 1/2 cup of chicken broth in the dish. The dish was superb!! ana

Yummy, yummy, yummy. I would have to agree with some of the other reviewers that it's a bit difficult to get the veggies coated so next time I'll drop everything in a freezer bag & shake it. I did everything according to the recipe & the chicken was a bit gooey on the bottom, but still looked like the picture on top. It took a while for the potatoes to cook completely & I finally gave up so they weren't quite as done as I like them to be, but husband LOVED this dish. I was skeptical about the dish lacking flavor with just paprika & dijon mustard, but it tasted awesome. I don't really care for mustard, but it really didn't taste like mustard at all so for all of those reviewers that swapped the dijon for something else I would truly encourage you to try it again. You will be surprised. It tasted like some sort of marinade or something, but the mustard taste was non-existent!

This is my lowest review so far. I did a few tweaks because I like more flavor in my food. I added about 1/2 tsp sage, 1/2 tsp of thyme and 4 garlic cloves sliced. I mixed the potatoes and veggies in a ziploc bag with the mustard to thoroughly coat. I used chicken tenders...because they were thawed. I'd recommend bone in white meat if you're going to use it or dark meat because it takes a long time for the potatoes to cook even if diced pretty tiny ( 1/2 - 1 inch). I had to take the chicken out, put the potatoes back in for about another 30 minutes to cook ...and what I should have done is put the chicken in another dish, turn it over so it could brown and put it back in with the potatoes. This recipe looks great, and with my modifications the flavor for me was spot on..but getting the chicken to brown and getting this to cook evenly requires more than the recipe tells you. Next time I will use skinless bone in thighs...I'll cook them to brown on top, then turn them to brown the other side all while still in the same pot. The flavor drippings from the chicken in this dish will help the potatoes( veggies). My veggies were orange bell pepper, onion red and white, potato red and white, carrots and garlic. I'll try it again...now that I know what to do!

OMG this was amazing!!! I did tweak it a little. I omitted the peppers, drizzled just a little EVOO over the veggies, and instead of paprika (yuck) I just had fun with some of my fave herbs. This is a recipe that you can totallt make your own!! Hubby loved it too!

Well I must say this did not turn out how I was expecting. I cooked everything according to the recipe & the chicken was a mess. The chicken was no where near what the picture shows. I was mushy on the bottom half and the top half was far from brown. In order to not waste chicken I ended up frying it for a few mins, which saved the meal. My husband liked the meal, but I can guarnatee if he saw what I saw coming out the oven he would have ran to "The King" for dinner. I must say using honey mustard instead of the dijon was also a tasty change. My husband enjoyed the meal, so that's what matters.

Forgot to add to my review... Since I am not a big fan of mustard. I changed instead of using dijon mustard i used Hellmann mayo and it was awesome.. i used green peppers and onions in my potaotes it was amazing... so tender and delicious..

I was looking over some recipes and thinking i doubt i could find a recipe of betty crocker and have everything i have in my kitchen. without having to go to the store and grabbing anything extra. well come to find out there was this recipe Easy baked chicken and potatoes for two. I cooked it and surprised my husband. When dinner was ready we all sat at the table and i waited for everyone to eat first and see what their expression was. my husband s first remark was "This is restaurant quality, honey." I was touched by that moment when everyone said mmmm this is real good where s u get this recipe from? I was like I never knew I could cook that good. Thanks Betty Crocker

My husband and I loved this recipe. I changed a few things, used honey mustard dressing instead of Dijon. We didn't have Dijon and the little bit of sweet added a nice flavor to it. The chicken was SO moist I didn't need a knife at all. I mixed the bisquick with the Parmesan cheese and paprika and added a little garlic powder and breaded the chicken with that. Used olive oil, salt and pepper on the veggies and it turned out perfect. My husband LOVED it!

I fixed this one night for my boyfriend. Who doesn't like mustard and I don't like onions and green peppers but decided to try this recipe. We both loved it and the recipe had more food than we could eat. Just because you don't like something one way doesn't mean you should give up on trying new dishes.

My chicken did NOT look like the picture, rather it was white & gooey from the bisquick. The potatoes did not cook thru, even after 50 minutes in the oven.

My family was very pleased with this dinner. I made it for more than two people. I also used dry ground mustard mixed into the bisquick instead of dijon mustard. Also, I used carrots instead of green peppers. It all worked out well enough and was a hit!

I was amazed at how good the onions and peppers tasted with Dijon mustard on them. The chicken didn't have as much flavor as I expected but I will definitely make this recipe again.

I used regular yellow mustard instead of dijon and the chicken and veggies lacked taste. Although the recipe doesn't call for lining the pan with foil, I would. It took me all night to scrub my pan clean. Drizzle some olive oil on the veggies along with some pepper. Use the dijon mustard and extra cheese for taste. The recipe would be great with a few alterations.

We really liked this. I only made 2 slight alterations to this recipe. I used a honey dijon mustard and I added mushrooms to the dish.
