Comments: I made these to eat while we were watching one of the football playoffs, and they were a big hit! Usually oven-fried boneless chicken is kind of soggy--not too crisp--but because these were chunks, they were crisper.
The chicken itself is very plain, not Thai, but that means you can offer a selection of dippers: BBQ sauce, honey mustard, etc., as well as the peanut sauce. The peanut sauce was great and a nice change.
I used cornflake crumbs (near shake n bake in your supermarket) instead of crushing cereal. I didn't have plain yogurt on hand so I used fat-free sour cream instead and it was fine.
Watch the peanut sauce! Mine burned on the bottom (the rest of the sauce tasted fine), and the pan was a mess to clean. |
